  2. 1 cup diced raw banana
  3. 1 cup diced bottle gourd (optional)
  4. 1/2 cup chopped fenugreek (methi) leaves
  5. 1 medium onion, thinly sliced
  6. 1 green chili, slit (optional)
  7. 1/2 teaspoon turmeric powder
  8. 1 teaspoon cumin powder
  9. 1/2 teaspoon rock salt
  10. 2 tablespoons oil
  11. 1/4 cup water (adjust as needed)
  12. Fresh coriander leaves for garnish

Method / Preparation

Follow step-by-step instructions
  1. Heat oil in a heavy pan over medium heat. Add the thinly sliced onion and green chili; sauté until the onions become translucent.
  2. Add the diced potato, raw banana, and bottle gourd; stir-fry for 3–4 minutes.
  3. Sprinkle in the turmeric powder, cumin powder, and rock salt. Stir thoroughly to coat the vegetables evenly.
  4. Add the chopped fenugreek leaves and a splash of water, then cover the pan and let it simmer on low heat for 15–20 minutes until all the vegetables are tender and the flavors meld.
  5. Garnish with fresh coriander leaves and adjust seasoning as needed. Serve hot as a nutritious fasting mixed vegetable dish.
