  2. 1 large ripe mango, peeled and diced

  4. 1/2 teaspoon mustard seeds
  5. 1/2 teaspoon cumin seeds
  6. 1 green chili, slit
  7. A few curry leaves
  8. 1/4 teaspoon turmeric powder
  9. Salt to taste
  10. 1/4 cup roasted cashews (optional)
  11. Chopped coriander for garnish

Method / Preparation

Follow step-by-step instructions
  1. Heat ghee in a pan and add mustard seeds and cumin seeds until they begin to splutter.
  2. Add curry leaves and green chili; sauté briefly.
  3. Stir in the diced mango and cook for one minute.
  4. Add the cooked rice along with turmeric and salt; gently mix until well combined.
  5. If using, fold in roasted cashews and garnish with chopped coriander.
  6. Serve warm as a uniquely sweet and savory dish.
